Purple Power Salad

I love nothing more than a salad with red cabbage as it screams freshness and always makes me feel good. This purple power salad does exactly what it says on the tin, it's purple and provides you with nutrients that will help boost and power your body.
This recipe is from one of my go-to books called The Medicinal Chef by Dale Pinnock and the book will help you eat your way to better health. Dale is a nutritionist as well as a food lover and often appears on TV talking about how to help heal your body through nutrition. He shows that food can be a powerful and enjoyable medicine and that diet should play a role in your healthcare. This recipe is good your skin (eczema), immune system, heart and circulation, digestive system and joints and bones - on top of all that it tastes absolutely amazing!
The ingredients are red cabbage, red onion, raw beetroots, flaxseed oil (I use olive oil), honey, balsamic vinegar, raw garlic and sesame seeds. It’s an easy recipe to make; you just combine all the ingredients in one bowl and then add the dressing. If you’re making it in advance, just add the dressing before serving.
Purple Power Salad

Ingredients
- ¼ red cabbage finely sliced or grated
- ½ red onion finely sliced or grated
- 1 large or two small beetroot, grated
- 2 tablespoons of flaxseed oil or olive oil
- 1 teaspoon of balsamic vinegar
- ½ garlic clove
- 1 teaspoon toasted sesame seeds
- sea salt and black pepper

Instructions:

Mix the cabbage, red onion and beetroot together in a large bowl.

Combine the oil, honey, balsamic vinegar in a small bowl. Add the garlic.

Drizzle the dressing over the vegetables. Sprinkle with the toasted sesame seeds and season with salt and pepper. Mix together and serve.

You can prepare the vegetables in advance and add the dressing just before serving.
